I’m so flippin’ excited because this recipe is totally customizable to make a sweet or savory version depending on your taste buds.

I’ll admit…I’m a bit of a granola snob.

So many brands are either loaded with grains, have a boatload of sugar, or contain low-quality vegetable oils.

That’s why I love making my own here at home. It’s really simple to make, you can customize it to suit your taste buds, and you get to kick it up with awesome ingredients.

Let’s talk about this Grain-Free Pumpkin Granola.

I’ve used a fresh assortment of raw nuts and coconut as the base, then totally went two different ways: sweet and savory.

The sweet variety smells exactly like fall. It’s got warm pumpkin pie spice, plump golden raisins, a touch of maple syrup and my secret ingredient, Vital Proteins Vanilla Collagen Peptides for a boost of protein.

Grain-free granolas can be heavy on the fats and carbs, so adding Vital Proteins collagen protein balances out the macronutrients.

And the savory grain-free pumpkin granola…OMG. It tastes just like Thanksgiving stuffing.

It’s got the same nut and coconut base, and then I add pepitas, aromatic rosemary, and dried minced onion. Then I toss in the other secret ingredient, Vital Proteins Organic, Free-Range Chicken Bone Broth Collagen.

When I tested these recipes, my husband Z could not believe how good the savory granola was. He couldn’t stop eating it!

So why Vital Proteins Collagen?

This Grain-Free Pumpkin Granola is very simple to make.

You’ll combine the nuts and coconut with the spices and Vital Proteins Collagen.

Then, you’ll add the binder. I use egg white to help the granola stick together and form clusters.

If you can’t eat eggs, you may want to experiment with other binders. Try adding a bit more pumpkin puree, for example.

From there, you’ll gently bake these granolas in a low oven until the nuts and coconut are perfectly toasted.

Make one or both! They’re both snackable as is, or try these suggestions:

Use the sweet as a topping on fresh fruit or on top of Vanilla Berry Chia Pudding.

The savory is great sprinkled on top of a salad or soup!

When I tested both these grain-free pumpkin granola varieties, they stayed fresh for well over a week. I stored them tightly covered in a Mason jar, and they maintained their crisp-chewy texture.

Sweet Grain-Free Pumpkin Granola Recipe

Ingredients

  • 1/2 cup unsweetened coconut chips (wide strands)
  • 1/2 cup raw unsalted pecans
  • 1/2 cup raw unsalted walnuts
  • 1/4 cup golden raisins
  • 2 tbsp Vital Proteins Vanilla Collagen Peptides
  • 1 tbsp hemp hearts
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • Pinch sea salt
  • 1 tbsp maple syrup or raw honey
  • 1 egg white

Instructions

 

Preheat your oven to 300F, and line a rimmed baking sheet with parchment paper. 

In a large bowl, combine the coconut chips, pecans, walnuts, raisins, Vital Proteins Vanilla Collagen Peptides, hemp hearts, pumpkin pie spice, and salt. Toss with your hands or a spoon until well mixed.

In a small bowl, lightly whisk together the maple syrup and egg white. Pour into the large bowl with the nut granola mixture and toss well until everything is coated with the liquid. 

Dump the mixture out onto the baking sheet and spread it gently. It's okay if some areas are clumpy...those make for good clusters.

Bake for about 6 minutes, then gently stir and rotate the tray. Bake for another 4-8 minutes depending on your oven. It's best to stay close to the kitchen for those last minutes because it can go from golden and crunchy to burned in a flash.

Remove when everything is golden brown. Let cool completely, then store in a covered contained for up to five days.

Savory Grain-Free Pumpkin Granola Recipe

  • 1 tbsp hemp hearts
  • 1 tsp dried rosemary
  • 1 tsp dried minced onion
  • Pinch sea salt & black pepper
  • 1 tbsp pumpkin puree
  • 1 egg white
