I think it’s definitely the best book yet, and I hope it makes eating well fun and delicious for you all. It’s so easy to get caught up in January diets, which I’m not a fan of, instead I think it’s all about finding a sustainable balance. I hope these recipes will help you find ways to include more fruit & veg into your life in a satisfying, enjoyable way.
One of my aims with this book was to show you that eating well doesn’t mean eating alone and feeling alienated, so I hope this can inspire you to cook for your friends and family too and get them excited about new ways of seeing veggies – things like the stuffed sweet potatoes with chickpea chilli, spiced cauliflower and coconut yoghurt are fab options for feeding lots of friends and family, as are the ideas below…
