Eggs are wonderful because they’re affordable sources of protein and healthy fats – remember that half the protein is found in the yolk! – and contain lots of vitamins and minerals.

But despite their versatility, it’s easy to fall into a rut and get bored. With that in mind, I’ve compiled a few of my favorite, slightly unexpected egg recipes to keep things new and fresh.

One tip that I need to share with you is the best way to make hard-cooked eggs. I thought I had the perfect boiling routine down until I tried steaming them. Game-changer.

I’ve heard lots of people having success with boiling eggs in my InstantPot, but I haven’t tried it yet.

1) Shakshuka (Eggs in a Spiced Tomato Sauce)

I love Shakshuka for a weekend morning when I’ve got a bit more time on my hands, but it’s delicious any day of the week.

Shakshuka is a one-skillet dish with a rich, spiced sauce of tomatoes, onions and peppers finished off with eggs nestled on top. Its origins are in Africa, though it’s popularly made throughout the Middle East. You’ll find many variations, some with fresh hot peppers used, some with dry spices.

2) Pizza Egg Muffins

Admittedly, pizza and eggs may not sound like two things that go together at first glance, but I dare you to try this recipe for Pizza Egg Muffins.

It’s all the flavors of pizza baked into convenient, hand-held egg muffins. This is a recipe that travels well and you can eat them sans-utensils.

The combinations of veggies and meat you can use are practically endless, so get creative!

3) Breakfast Stuffed Peppers

These Breakfast Stuffed Peppers require a bit of prep time, so I usually make them on weekends when I’m not super busy.

If you want to bump up the protein, mix in some grass-fed ground beef with the spinach or layer it between the spinach and egg. I think these would be delicious sprinkled with chopped crispy bacon!

4) Chicken Sweet Potato Frittata

Chicken and sweet potatoes are two things I usually have leftover in the fridge, so I thought why not combine them into a frittata.

Frittatas are great because you can create them in just one skillet – cast iron is my favorite, they feed a crowd inexpensively, and they’re even better leftover the next day.

Confession: I was mildly addicted to this Avocado BLT Egg Salad for a while!

This guest recipe by Lexi’s Clean Kitchen is one of my favorite egg salads ever. The combination of the avocado, bacon, tomato, and green onions is the perfect combination of flavors and textures. It makes a batch that will keep for a few days, and it’s the perfect take-along lunch or quick breakfast.
