I’m so excited to announce our two supper clubs at Wilderness Festival this summer. They’re both going to be beautiful four course feasts, put together by our head chef at mae and myself. The menu is really special and I can’t wait for those of you coming to try it:
First Course
Seared aubergine with spicy slow roasted tomato, roasted garlic puree and a sweet and salty nut crumble
Second Course
Enoki, portobello and shiitake mushroom ceviche, marinated in tigers milk and mixed with red chilli, red onion and coriander
Third Course
Pressed beetroot and sweet potato gratin with broad beans, seared fig, chard leaves and thickened coconut yoghurt
Dessert
Brown rice milk and coconut palm sugar panna cotta with chard nectarine and candied pistachio
To Drink
The Mae Cooler, with organic gin, homemade elderflower infusion, cucumber, mint, lime and soda
The evening will be held at the Sanctuary, which is the perfect setting to enjoy a beautiful evening meal overlooking the lakes and watching the sun go down. Tickets are available here. We can’t wait to see you there!
